Thanks to 8chocolate, I found myself fighting the urge to hide this delicious Chocolate Chunk Banana Bread from my family! My house smells soooooo good!
I drool over 8chocolate's blog entries and love following her at @8chocolate on Twitter. Lately, it has been satisfying my chocolate addiction without physically participating in it...as much as I used to.
When I saw her recipe for Chocolate Chunk Banana Bread, I flashed back to my childhood. My grandmother was an exceptional baker and she kindly passed her skills on to my mom. We regularly came home from school to homemade bread, cookies, pies and the like. Birthday cakes were always made from scratch and looked like they were plucked out of a Wilton idea book. Still, my mom's banana bread was one of my all time faves.
This is the first time I've strayed from the classic version I grew up on and I'm so happy I did. As it turns out, I bred monkeys, not children, so my banana stock was a little short for this recipe, which calls for 3 cups. I wasn't really interested in going back to the store so rummaged through my baking cupboard and found sweetened coconut. I like coconut and remembered that my mom had done a little swap for a loaf she made over the holidays last winter. Normally, I would pick up the phone and ask my mom for the specific details but I wanted to experiment on my own this time and see what happened. Since it was sweetened coconut, I reduced the sugar by about 1/4 cup and used a cup of coconut to replace the missing bananas. Clearly, the banana does not fall far from the tree! Tastey!
The aroma of the chocolate and banana concotion was too tempting and I ate a piece, steaming hot, before I snapped the photo. Thinking back on it now...I might have to sneak another little taste before bed. Mmmmmm...and then there is breakfast. That loaf will be crumbs in no time!

My beau LOVES coconut so I think you're on to something with that coconut switch-aroo. He saw your photo and he's already asked when I'll be making your version!
